This is the first recipe I made in my instant pot! I adapted an old slow cooker recipe and it came out so good! I think I am really going to love having an instant pot. It does everything and so fast! Enjoy!

Instant Pot Red Lentil Curry


  • 2 cups red lentils, rinsed and sorted
  • 1 onion, yellow or white, diced
  • 28oz canned, organic diced tomatoes
  • 1 tbsp organic tomato paste
  • 1 tbsp garam masala
  • 1 tsp turmeric
  • 1/2 tsp cayenne pepper (adjust as desired)
  • 1 inch piece of ginger, peeled and minced
  • 3 cloves of garlic, minced
  • 1 can of coconut milk, unsweetened, regular
  • 3.5 cups broth, water or a combination of the two (I used 1/2 chicken broth, 1/2 water)
  • 3 tbsp thai curry paste
  • 2 tbsp butter
  • Juice of one lime
  • Rice & cilantro for serving (optional)


  1. Put all ingredients in the instant pot
  2. Close lid, turn switch on top to "sealed"
  3. Press "bean/chili" button
  4. Add 18 minutes to the timer
  5. The instant pot will take some time to warm up, usually about 10 mins, and then the timer will start counting down
  6. Wait until the timer is finished and "L00:00" shows up on the counter (this is warming time)
  7. Do a "quick release" by turning the switch on the lid to "venting" and wait until ALL of the steam finishes releasing before opening the lid
  8. Serve over rice and garnish with cilantro if desired!
